Recipe: 10-Minute Chicken and Veggie Salad
This tasty and healthy lunch can be whipped up in just minutes! It's also very adaptable to your tastes. Grape, mandarin oranges, and dried cranberries are so yummy in the chicken salad, and there are so many veggie options for the salad. If one of your New Year’s resolutions was to eat more veggies, then this is the perfect way to get them in.
10-Minute Chicken and Veggie Salad
- 1 Can cooked chicken, or 1 cup shredded cooked chicken
- 1 Stalk celery, chopped
- 1/3-1/2 cup mayonnaise (adjust for your taste)
- Curry powder, to taste
- Assorted veggies: Sliced carrots, Lettuce, Cucumbers, Tomatoes (pretty much any of your favorite veggies are perfect!)
Mix together the chicken, curry powder, celery and mayo. Chop the veggies and build a salad by mixing them the lettuce. Top with chicken salad.
Now you have a perfect healthy lunch in just 10 minutes!
